This ensemble has been slowly taking over many bars across the many countries. With Benito Salcedo taking more responsibility of the production of the expression, its a joy to experience how this lovely expression makes it way into the world.
Tabernas is an incredible mezcal to get acquainted to the raicilla world. Fresh and flowery at the start with a low smoke profile.
Benito and Jose S. Ríos are an excellent team. Benito himself, an agronomist and engineer, oversees all farming tasks, from germinating agave seed to maintaining plantations of both Chico Aguiar agave and Maximiliana agave. Joel is in charge of the tasks of the tavern, cooking, fermentation and distillation come from his hand, which he learned from Don Felix´s grandson. Don Felix was a legendary maestro in the area and mentored many distillers
They have set an example, showing that younger generations can do things well too.
