From the Highlands of Jalisco comes this distinctive expression of Bonete, exploring the traditions of the Sierra Occidental. Crafted by Maestro Luis Aguirre in the village of La Estancia, this spirit highlights the unique character of the Maximiliana agave an endemic species of the region.
Cooked in an adobe oven fired with black oak and milled mechanically, the agave ferments in open-air plastic containers before undergoing a single distillation in a stainless-steel alembic, a method that preserves its bold aromatic profile.
Expect warm aromas of cocoa, fresh plum, and wood, followed by layered flavors of oak, quince, and anise. The texture is silky and warm with a lingering bittersweet finish, showcasing the depth and elegance of Highland spirits and low smoke.
