We found some dusty bottles of Sombra in the basement and thought it might me a nice treat to offer them in the webshop.
Sombra mezcal its a brand that has exceled the term of what we generally know as traditional production. Their new palenque in Santiago Matatlan is a real treat to see, as they have slightly modify the rudimentary process that needs to be endured to produce That smoky mezcal that everybody likes nowadays.
From the tahona to fermentation, distillation & even the roof have a technified system to collect the rain water. This are are some of the many changes they have made to have a more stable production.
NEVERTHELESS we have a very old batch that was produced in San Luis del Rio by Juan Isaias Martinez. Have to say, I was marveled by the visit of this palenque. One for the books!!
